Seamless Integration, Palak Paneer Lasagna

One of the best things in my life is being married to my husband. It is also a fact that makes life very interesting at times. Like when we need to eat. I LOOOOVE Asian food! Indian, Thai, Chinese, Japanese you name it! But sometimes my European roots come tugging at my taste buds and I want to enjoy European cusine, which is more delicate in flavor. Indians sometimes call it bland, I don't agree. Instead of spices, herbs and veggies take the center stage, so you get a more subtle flavor profile. Sometimes I think that so much chili has completely burned off the more delicate receptors. :)
That being said, I love to combine the best of both worlds! Like today, I am in the mood for Lasagna but it is Tues which means hubby dearest is fasting. On days he fasts I want to serve him Indian food, as that is his preference. (my sweet snob) So I got the idea to make a Palak Paneer Lasagna. The idea came from my favorite source of inspiration... Food Blogs! I had recently come across a Trader Joes Cooking blog, LOVE IT! Trader Joes is one of my 3 food stops and I am so excited to try some of their awesome ideas. One of them was the Saag Paneer Lasagna. Now, I have not actually seen this recipe as I couldn't find the link. But it got me thinking. This should be a perfect combination of flavors!

The Plan:

2 Boxes Trader Joes Palak Paneer
1 box no boil lasagna noodles
1/2 cup lite finely shredded cheese (I had the TJ variety)
Tomatoes? we shall see.

So that is the plan we will see how it goes and let you know!
